Introduction: In this blog post, we’re introducing you to a delightful Georgian appetizer: mushrooms filled with Sulguni cheese. This simple and delicious recipe is perfect for a quick snack or as a starter for a meal. Although traditional Georgian ketsi dishes are used in this recipe, you can substitute ovenproof dishes if you don’t have any ketsi on hand.
Ingredients (serves 3):
- 500 grams of mushrooms
- 165 grams of butter
- 100 grams of Sulguni cheese (you can substitute another cheese, such as mozzarella, if you don’t have Sulguni)
Preparation:
- Begin by grating the cheese.
- Carefully remove the stalks from the mushrooms.
- Add 40 grams of butter to each ketsi pan (or ovenproof dish) and place the mushrooms in the dishes.
- Put the remaining butter in each mushroom cup and bake in an oven on low heat for 20 minutes.
- After 20 minutes, add the grated Sulguni cheese to each mushroom and continue baking on low heat for an additional 20 minutes. When ready, the mushrooms should look similar to the ones in the picture below.
Serving: Serve the mushrooms hot, with or without a sprinkling of black pepper. Enjoy your Sulguni cheese-filled mushrooms!
