Introduction: Sinori is a rich and savory breakfast dish from the western seaside region of Adjara in Georgia. It is made with lavash flatbread, Georgian cottage cheese, and butter. Though lesser-known outside of Adjara, it is quite popular locally. If you ever get a chance to visit the region, don’t miss out on trying this delicious dish. Here’s how to prepare Sinori to enjoy a taste of authentic Georgian cuisine at home.

  • Lavash flatbread (similar to tortilla)
  • 100g of butter
  • 200g of cottage cheese or nadughi (similar to ricotta cheese)
  • Salt, to taste
  • Georgian soft cheese, to taste
  • Optional: chopped garlic

  1. Melt the butter in a saucepan, then add the cottage cheese and salt to taste. Be cautious not to add too much salt. If desired, add a little bit of chopped garlic for extra flavor. Mix well.

  2. Wrap the lavash flatbread and cut it into rolls.

  3. Place the lavash rolls on a heated pan.

  4. Pour the butter and cheese mixture over the lavash rolls, ensuring it almost covers the pieces.

  5. Add some grated Georgian soft cheese on top and cover the pan.

  6. Cook the dish on low heat for 10 minutes.

Serving: Serve the Ajarian Sinori warm as a delicious and satisfying breakfast dish. Enjoy the unique flavors of this traditional Georgian meal and start your morning with a taste of Adjara.
