Introduction: Pomegranate and walnuts are popular ingredients in Georgian cuisine. This family recipe features a delicious chicken salad with walnuts and pomegranate seeds, perfect for a refreshing and flavorful meal.
Ingredients:
- 600g chicken breasts
- 200g salad leaves
- Seeds from half a pomegranate
- 3-4 green onions
- 4 cloves of garlic
- 100g walnuts
- 4 boiled eggs
- 1 level tsp dried marigold
- 1 level tsp dried coriander
- 1/2 tsp blue fenugreek
- 1 heaped tsp dried red pepper
- Salt, to taste
- 7 tbsp oil
Instructions:
- Sprinkle the chicken breasts with 1/4 tsp of red pepper and salt. Fry in 7 tbsp of oil over medium-high heat for up to 20 minutes or until crispy, turning halfway through. Reserve any leftover juices from frying the chicken.
- Chop the salad leaves and add them to a mixing bowl. Cut the fried chicken into pieces and add them to the bowl.
- Use a mortar and pestle to crush the garlic and spices. Add the walnuts to the mortar and crush them together with the garlic and spices.
- Add the crushed nut/garlic/spice mixture to the mixing bowl containing the fried chicken and salad leaves.
- Add chopped green onions, 4 chopped boiled eggs, the remaining hot red pepper, pomegranate seeds, and salt (to taste). Mix thoroughly.
- Add 3-4 tbsp of the reserved juices from frying the chicken. Mix thoroughly.
Serving: Serve the Chicken Salad with Walnuts and Pomegranate immediately. Enjoy!
