Leek pkhali is a popular Georgian dish that combines vegetables with walnuts. This version uses leeks and is often served as a finger food or appetizer. Ingredients:
- 1 kg of leek
- 300 g of walnuts
- 1 onion
- 2-3 garlic cloves
- 2 bunches of coriander
- Salt and pepper, to taste
- Ground blue fenugreek seeds (optional)
Preparation:
- Clean and trim the leek, then blanch it in boiling water for a couple of minutes. Remove the leek from the water, let it cool down, then squeeze out the excess water.
- Either chop the leek finely or pass it through a meat grinder.
- Add thinly sliced or ground onion, garlic, and walnuts to the leek.
- Add chopped coriander, salt, pepper, and ground blue fenugreek seeds (if using) to the leek mixture.
- Mix all ingredients until well combined.
Serving: Serve the leek pkhali as an appetizer or finger food. It is especially tasty when accompanied by hot mchadi, Georgian cornbread.
